Ham and egg cups

A lot of people interested in these, so I am going to go ahead and get this up so y'all can try them out for yourselves! They are amazingly delicious, I am eating one right now... and I'm thinking I'll go for a second (which would actually make my fourth for the day!)

This is probably the easiest thing you will make all week, Friends! 

Head to the deli, get yourself some smoked ham in whatever thickness you prefer, I think a thinner slice would work best, it's what I used, use two slices for each muffin cup. Be sure you grease your muffin pan! Fold each slice in half, so it's a semi-circle, flat side down into the pan, rounded edge sticking up over the pan, use both slices to make a "cup" of ham. Crack your egg right into it, and bake for 15 minutes at 400 degrees. You can add whatever you would like to the top BEFORE you bake them. I added cheese to half of mine, and would have also added green onions if I had any. I am thinking tomatoes would be a great add to these! After 15 minutes, take them out and enjoy! 











I'm thinking these would be great for Christmas morning along with a pan of ooey gooey cinnamon rolls! 

And they are so cute... like one of my Instagram friends said, little egg flowers! :)  They definitely have the eye appeal to function great at a brunch event! 

Meal Plan Monday.... a helpful tip and more FOOD!

Sorry for the gap in entries lately, this is a busy, busy time of year for this family, hosting a Halloween party, pageants, sports, and the holidays coming up doesn't leave me much wiggle room with free time! I promised some of my regular blog viewers to get these recipes up though, and it's Meal Plan Monday again... so here we go!

This weeks meal plan was right around the $85 mark... so back to a per meal cost less than $4! Yay! It's also still a fairly healthy and super easy menu!

As for the last few days, they have been crazy! I may or may not have mentioned my girls do a couple pageants a year, nothing major, non of that glitz and glam pageant princess-y type of stuff, just a couple local pageants, just for fun. Miss Aleix Noelle has won the talent awards in every pageant she's ever done, and Lil' Miss Cortland, she just loves to get all prettied up and wear some bling bling for the night! But on top of both of them being in the pageant, my sister is the director and I do all of the design and printwork for the pageant book and any other print/design project that needs done for the pageant. She waives our entry fees (those things are pricey!!) in exchange for my work. It is tedious and time consuming work, but I love it. This year's theme is a brightly colored (think all the in trend neons right now) Hollywood one, and I love it! I absolutely LOVE doing design work, and would love to do it as a side job to being a wife and mommy, but unfortunately, right now, that job is demanding enough it leaves me little to no time for it. Maybe someday... So, if I am slow to post the next two weeks, it is because I am nose deep in paperwork, ads, pictures, bios, sponsorships, printing, stapling, designing... not to mention doing my best to get dresses and personality wear outfits lined up, fitted, steamed, etc... for the girls! The pageant is next weekend and I feel like I need three more weeks to prepare! Me having always been a good 'ol tomboy, and all this fancy-schmancy, girly stuff isn't the best combo, but we make it work somehow! I'm probably the most out of place pageant mom there! Ha ha! Maybe I should wear my camo and hunter orange next weekend... wouldn't that be a sight to see?

Okay, on to the food!

I'm so far behind!



Thursday night, what I had planned was not working out so well for me. If you remember on my meal plan from last week, I had Salisbury steak... Well, it doesn't work out so well if you have nothing on hand to make brown gravy! YIKES! I already had the steaks frying on the griddle, and I was stuck with no brown gravy, no beef bouillon, no beef broth... oops. Guess I forgot to add that to my list last week. I had to make a quick switcheroo and whip up some white, peppered gravy... making it country friend steak instead. I've actually never made country fried steak before, but it was so easy, and the gravy was really good!



Add in some garlic red potatoes, broccoli, and biscuit, and you've got a heck of a meal!








Which brings us to the weekend!

My mom came up for dinner Saturday, which was awesome! She hasn't felt well and I haven't seen her in over a month... even a 33 year old mommy of four needs her own mommy every now and then! Love you, Mom!
She had never been blessed with the succulent taste of deer backstraps made Hubby-Style! Seriously, folks, even the biggest venison hater would fall in love at first bite. You would never know it is venison, and as my mom said, "It tastes like a really good steak!" Yeah. It does. I rank those backstraps right up there with Thanksgiving dinner. Now, this was my first time making them, so I was a little nervous about it. The Hubby is always the one at the frying pan for these, but he was hunting, and Mom lives down in Indiana, we just couldn't wait until he got home... but I pulled it off! I was so excited I didn't screw it up to be honest! I made corn and onion rings to go along with it, and although my onion rings didn't fry up as I had hoped, they were really good. They may not have been the prettiest things, but they certainly went well with the backstraps and corn.

If you or your husband are hunters, and you aren't making your backstraps Hubby-Style... you MUST try it! Get online (or go to Gander Mountain) buy some Shore Lunch batter mix, cut those backstraps medallion style, they should be about 2-3" diameter, coat them with the Shore Lunch, and throw them in the deep fryer or brown them in a frying pan! That's it, best backstraps you will ever eat.

These are my not-so-pretty-but-delicious onion rings... I didn't save the recipe, because I wasn't happy with the way they turned out, so I'll try something new next time... unless one of you have a good recipe for a deep fryer?

On to Sunday morning, I let little Miss C decide what she wanted for breakfast, and she was all over the pancake dippers I made a couple weeks back... you know, the bacon encased with pancake... Mhm. I decided to mix it up a little though, seeing as I how I have an obsession with blueberry pancakes. I made her's with the normal homestyle pancakes, but The Hubby, Tiny Tornado and I all had our bacon wrapped in divine blueberry pancakes. Oh my goodness... YUM.





Sunday night was Miss C's choice again, I can't get the kid to eat many veggies, but when it comes to broccoli, she eats it like candy! So she was excited when I gave her the option of broccoli, chicken, and cheese burritos. She loves these things! She's been known to eat two in one sitting! And they certainly are not tiny, as you can see from the picture, they take up much of the plate. This is something I came up with to fight off my craving for a Mexican restaurant down in Indiana. If you have a Bandidos anywhere close, you should definitely try their broccoli three cheese burritos... they are to. die. for! When I moved to Michigan, I no longer had the option of heading into town to satisfy my craving, so I had to take matters into my own hands... and this is what I came up with. It's close to theirs, but not exact... close enough it takes the edge off that craving of mine anyway.

Just boil your chicken breasts, cook up some fresh (or frozen) broccoli, and you can use whatever cheese you would like. I used to use Velveeta, but that processed block of cheese (if you can call it that) is something I have been avoiding as much as possible. I actually am planning on using some this week, and I wasn't about to use it twice in one week! I used shredded, and actually, I think I liked it better. Cube or shred your chicken, whatever you prefer, add in a generous portion of broccoli, and top with cheese. Fold both ends of your tortilla, then roll it up and top it with white queso. I would love to make my own queso, but it's much cheaper to buy the jarred queso in the chip aisle. So for now, it's queso in a jar! Delicious though, and very filling!


One of my make ahead foods for the week was this dill cucumber Greek yogurt salad... it's good, but I think I prefer the cucumber salad with vinegar I've been making, although this would be a good thing to make up and take to a summer picnic or potluck.

I used three cucumbers, rather than four, but I think mine must have been larger than average, because I feel like there wasn't enough yogurt and seasoning. I did add a bit more pepper to it, which kicked the flavor up a notch.


And here's a tip for you all, it seems like a "duh" moment to me, like, why haven't I come up with this sooner?! I have a magnetic dry erase board on the front of my fridge, and I use it for simple memos, but often times just as a seasonal greeting. For now it says, "Happy Fall" which will change to "Happy Halloween" as soon as I'm done making this entry... but there it was, right there in black and white... 

..... dry erase markers on my storage containers with contents and dates. What an easy way to keep track of leftovers and know when to throw them away! 





Before I close this up, I just want to say thank you to my loyal readers! I appreciate the feedback many of you have given me. :) I kicked the idea of a blog around for so long, and after so many nudges from friends and family, I gave it a go. I didn't think it would take off like it did, and I certainly didn't expect it to help as many as it has already! I've said before, I have some more plans for the blog, so stay tuned! I am hoping to begin adding more shopping tips and a shopping list with prices after the first of the year. I can't promise to have it incorporated before then, the next two months are going to be absolutely crazy here on the homefront!

I will continue to post at least twice a week until then, and hopefully more as time and Tiny Tornado permits, but I just wanted to let you guys know how much your feedback is appreciated! It puts a smile on my face every time I hear how I helped someone.

The rest of my week will be buried under with pageant book work, pageant preparations for next weekend, and somehow fitting in the larger-than-I-planned Halloween party this Thursday night! What started out as 25 invitations quickly grew to be about half of the high school (literally... so glad we live in a small village!)... but oh well. They are only young once, and it's once a year... we will push through and have a blast!

Blueberry Banana Bread!

Brrrrrrrr!

It's cold... last night, heading out to get my son's hair cut, it was snowing. I would have been excited, except it was mixed with rain, which makes for a cold day out! I don't really mind snow, not at all actually (living in Michigan, you better be at peace with it or find a new state!), but I  can totally do without the rainy/sleet/slush/ice/snow mix that often comes about this time of year. I say if it's going to snow, go big or go home (or back to Alaska). I like snow, in big quantities... you know, the kind that keeps you inside for a couple days, cancels school. You know what I'm talking about. Those are the best times of the winter. Snow days. Sledding, ice skating, ice fishing, hot chocolate, caramel corn... best days of winter.

You know, I was thinking today, and I have purchased only one box of cereal in the last three months. Yep, that's it. One. That was a special treat for the kiddos for after school snacks, because Miss Spunk (that would be the 6 year old) had tagged along on a shopping trip and was so well behaved. It was the only thing she asked for in that whole excursion, so it was her reward. :) Reeses Peanut Butter Puffs... They were in Heaven for that week. :)

I love cooking breakfast every morning, but 6 months ago, if you would've asked me how I felt about getting up early to cook breakfast, I would have laughed. Early? What's early? At the time, Tiny Tornado was up every hour on the hour, until about 8am, then he would fall sound asleep until 10 or 11... right smack dab between his daddy and I! It was the only sleep I got, I had to take advantage of it, and though there were many times we had eggs and toast at 11:30am, usually you would find 10-12 boxes of cereal in my pantry at any given time. YIKES! No wonder my grocery bills were so much higher, cereal is certainly not the most budget friendly breakfast!

Speaking of breakfast, we tried a couple of new things this week. Okay, three to be exact. Two of the three were hits with everyone, and while this morning's breakfast wasn't the fave (it involves blueberries, and for some odd reason I can't quite understand, 3 of my 4 kidlets dislike blueberries!), they ate it with little complaint.

Tuesday morning we experimented with breakfast burritos. I'm sure I'm so late to the game. My guess is many of you have made these before, but until recently, we were stuck in the same egg/pancake/waffle/cereal/pop tart rut, so this was new to us!

I simply cooked up a pound of breakfast sausage, 6 scrambled eggs (I always mix my eggs with milk before cooking), and some shredded cheese. Wrapped them up and browned them on the griddle, probably 3 minutes each side. My kids went crazy over these. The girls even packed one for their lunches at school.

Dinner last night was not a crowd pleaser. I actually loved it, but The Littles not so much. I packed some leftovers in The Hubby's lunch today, so we shall see what his opinion is. Either way, it's not being added to our menu options for the future, simply because the majority rules. If it were up to me, I'dd keep it and toy with the recipe a bit...I did double the recipe to accommodate my family and I ended up adding bacon crumbles to the leftovers to change the flavor up a bit. I think if I were to make it again, I would use less Greek yogurt, or add something in to override the yogurt taste a little more.

*The first thing the kids noticed was the yogurt taste... the second thing was the spinach. Ha!

My favorite recipe so far this week... Banana Blueberry Bread.

This was more than amazing, and though my kids aren't fans of blueberries, they still liked it enough to eat it. I definitely be adding this one to my files, and did I mention how awesome it smells while baking? My house smelled divine at midnight (yeah... I am a night owl).

This recipe is a bit more healthy than normal breads of this nature. It uses whole wheat flour along with white (although you could easily use all whole wheat), and uses Greek yogurt flavored with honey. The recipe itself calls for the Chobani honey flavored yogurt, but since Meijer doesn't carry that flavor, or not that I could find anyway, I just added my own honey.

So tasty... there is one small piece of this left, and I am using the utmost restraint in not devouring it!


And last but not least, a wonderful little treat my son introduced me to!

Cinnamon bananas!!
These are so easy! Slice the banana up, sprinkle generously with cinnamon, sprinkle a little bit of sugar (he used brown sugar when he made them last night), and set them in the fridge for a couple of hours, uncovered. I guess they served these at his school last year and he fell in love. He looooves bananas. If he isn't making these for an after school snack, he usually is making a banana smoothie instead.

I have to admit, I was a little hesitant when he first made them, for some reason, it just didn't sound like a good combination, but I was wrong. Oh so wrong! They are now one of my favorite snacks!

Apple Dumplings and More

**Rewind Time**

Back to Saturday night we go... Miss Aleix Noelle had a couple of friends over, one of which has a very severe allergy to nuts. Saturday also started the very cool Fall weather for the season, I'd say our crazy long Indian summer is now a thing of the past... looking ahead, there is *~*~Snow~*~* in our forecast! Of course, I'm headlong into my list of pumpkin "to-do's" for the season, but as soon as that weather turns, I begin to crave all the warm desserts and hearty meals Fall and Winter often bring with it. One of my very favorite down-home, cool weather meals is Chicken and Amish noodles with mashed potatoes, corn, biscuits and followed up with hot apple dumplings and vanilla ice cream! I'm drooling just reminiscing of Saturday's meal. I really think I could live on such things!

As I mentioned yesterday, I actually made two trips to Meijer this week, working off of two different ads, and as I was there Saturday afternoon, gathering the things I need, cart half full of groceries, my brain was reprocessing the fact that I was working around a peanut allergy. This is not something I am used to, as we have no known allergies in my family, and I had, in fact, planned this meal based on that allergy, knowing it should be a "safe" meal. The point is, I had forgotten to check the labels of everything I would be using. Common sense would say there are no peanuts in there, but common sense doesn't have to worry about a deadly allergy! So there I stood, in the middle of Meijer, reading all of the ingredients on every item in my cart! Whew! I was safe!

The girls hung out with me in the kitchen, and I was privy to some top secret high school chatter. ;) As I was cooking, we discussed boys, our upcoming Halloween party (which is going to be a lot bigger than I expected, Halloween costumes, and hair dye.... it kept me thoroughly entertained for the hour and a half it took to boil and shred my chicken, cook noodles, and mash potatoes.  If you've never listened to three teen girls chitter chatter over their latest crushes, you are surely missing out on some wonderful comic relief! On a serious note, I very much enjoyed that hour and a half with three wonderful young ladies, and I'm glad we all had that time together.

Over dinner, it was decided that once The Hubby got home from hunting, we would make a quick trip into town to buy some hair dye for Miss Aleix. This was a tough one for me, not being the "hair dye type", and always going au natural with my hair, I struggled to let my baby girl jump head first into that new adventure, knowing full well the maintenance and upkeep it would require. But alas, it is her hair, not mine, and she definitely has a sense of style that I envy, so I agreed we could give it a try. I had offered to do it myself (trying to save money), but all she said was, "Mom, I don't want purple hair." All I could do was laugh, because I can't guarantee that would not have been the outcome. Of course, she allowed her friend to do it, but her friend has some hair dye experience, so I guess I got trumped. I must say, I was more than impressed with the outcome, I promise to post a picture in a moment, but first, back to Apple Dumplings....

With apples being on sale for $.69/lb right now, I feel compelled to use them in as many desserts and meals that I can! You just can't go wrong at that price...


          




 If you've ever made apple dumplings, you know they can be quite time consuming, and they have a fairly long bake time. It worked out perfectly though, because I had the prep work done, and ready to pop into the oven when The Hubby came walking in. Into the oven went the dumplings and off to the store went the ladies and I in search of the perfect hair dye for my little lady. 

If you are interested in the recipe I used, it was fairly simple for being apple dumplings, and a lot less time consuming than some of the other recipes I've used in the past. And now for Miss Aleix's beautiful hair... She went from a dirty blonde color to a beautiful red, with blonde peekaboo highlights underneath. I was blown away by how professional it looked, having been dyed by a 15 year old girl! It looks great with her complexion and for sure fits her spunky personality!



Nothing too time complicated for Sunday night, The Hubby indulged us with his delicious venison backstraps, a rare treat we only have a few times a year, and with a tired Tiny Tornado hanging onto my legs and fighting his sleep, I cut up some potatoes, seasoned them with mesquite seasoning (McCormick), onion powder, garlic powder and a bit of Lawry's seasoning. Used the deep fryer and they came out perfectly. Believe it or not, it was actually my first time ever making my own cut french fries! 
Annnnd.... We arrive back at Monday. 

Busy kitchen day for me yesterday, trying to get some things made ahead for lunches and such, and Tiny Tornado taking a shorter nap than usual wasn't very conducive to my original plan. I made do the best I could, though I didn't get everything I wanted done. Looking back over yesterday, and peering into my fridge today, I guess it worked out well that I didn't get it all done, as I am out of storage space in my fridge until we eat up some of our leftovers! (I'm working on that part, much to the chagrin of my hips... I just finished off last nights leftovers... ) 

I was able to get my pickled eggs done, and I believe those to be the most time consuming of all tasks I had on my list, so that was a good one to be able to check off! 14 eggs pickling away in my new pickling jar, as I call it. I was so excited to find this large sized jar (remember, there are 14 eggs in there right now, and it's only half full!). I was planning on buying a large canning jar, but Meijer never disappoints me on their item selection! And for only $6, it was very budget friendly. :) I had several requests via email, Facebook, and message board for the pickling recipe I use. I will just link to the basic recipe, though I do not use cinnamon in mine (now there is a shock!).




And of course, my avocado egg salad, because for now, it's on my list of favorites to eat for lunch. I am sure, after three weeks straight I will begin to get bored with it, but for now, it's hanging in there!

This is also very simple to make. I use 4-5 boiled eggs, 2 avocados, only a tablespoon or maybe two (depending on the avocado consistency) of real mayo, salt and pepper, and a bit of curry powder. I apologize, I don't measure, I do the "sniff test", but if I had to guesstimate, probably about 1/4 to 1/2tsp of curry.






Catching up now! Full steam ahead to last night's dinner! I'm excited about this one! 
Stuffed Hungarian and Jalapeno Peppers
So easy, my friends, and oh so delicious!

Instead of 10 Hungarian peppers, I used 7, and replaced the other three with Jalapenos (I had to... my son loves anything jalapeno!). 



I happened to have a block of Mozzarella in my fridge from a couple of weeks ago, still unopened, so I used that rather than packaged cheese, and just grated it myself. There is something about freshly grated cheese... I don't know what it is, but I love it!


Generous amounts of grated parmesan on top....


And to go with, we had tri-color rotini, with a bit of Italian dressing and melted Mozzarella mixed in....



So incredibly delicious, by far one of my favorite Pinterest finds as of late! Will be making these again... Soon!


And breakfast this morning was incredibly easy, though it took me a bout 30 minutes total prep time when I add in the fruit salsa I made ahead last night. But the kids loved it, and it was a healthy start to their day, not to mention pretty darn tasty...
Fruit Salsa was very easy to make, it was the first time making it and in fact, my first time tasting it! I now need to find some more creative uses for it, because it was very well received from the kidlets.

Kiwi, Strawberries, and Apples, finely chopped, add in some Strawberry preserves, and throw in the blender until desired consistency.


To go along with the fruit salsa, I also whipped up some vanilla yogurt (just used a touch of sugar, vanilla extract and mixed in with plain Greek yogurt) for added fun dipping!

Peanut butter and banana quesadillas, heated and browned on the griddle, cut into triangles and served with salsa and yogurt.


I kind of got a giggle this morning as I packed The Hubby's dinner for work... as I arranged some leftover peppers and pasta in his typical lunchbox container, I noticed how perfectly coordinated the colors were. How cute. ;) Though you can be sure he won't notice such a detail. Ha!


And here is something I learned on Pinterest, such a great way to save money in the longrun!
If you use buttermilk at all (or even half and half or heavy whipping cream), you know that more often than not, you have to buy up in quantity, far exceeding the amount you actually need for your recipe. I have always found this rather wasteful, especially with buttermilk. Browsing through Pinterest a few weeks ago, I saw an ice cube tray, filled with white cubes. Scrolling down, I saw a genius idea! Freeze the additional buttermilk for future use, in 2 tablespoons per ice cube mold. Noticing that I was only a couple days from my expiration date on it yesterday, I figured I better do it now rather than later, or I will undoubtedly get busy and forget all about, wasting yet another nearly full half gallon of buttermilk. I did just as the pin said, I measured 2 tablespoons for each cube. Then it dawned on me. I have no where in my freezer to put an ice cube tray. **sigh**

I like my idea much better anyway.

My most common measurements with buttermilk recipes are almost always 1/2 cup or 1 cup. So I measured those into their own freezer bags, for easy additions to recipes down the road. Being able to lay flat or molded to whatever shape I need them to fit into (freezer door in my case) was much better than trying to make a safe place for an ice cube tray. So next time you have to buy buttermilk in an amount 12 times greater than what you really need, remember this trick, and you will have buttermilk for months down the road!
